When you need to beat the heat . . .

Nothing beats an ice cold slush.


It may be back-to-school time, but here in my neck of the woods we're still hitting record highs.


When the great outdoors feels like a sauna, you know it's slush time.

What's in a Sunshine Slush?

I love to make slushes with super-hydrating coconut water. Often I will stick to a tropical flavor profile with things like frozen pineapple and lime juice (like my crazy-addictive Blue Ocean Slush), but this time I wanted to go in a new direction.


Monster 3 recently had his tonsils out and was supposed to avoid eating anything too dark or reddish for a while so we could tell if he coughed up any blood after the surgery. So I opted for frozen peaches and frozen green grapes.


My initial plan was to blend just those three things--coconut water, peaches, and grapes--but I was completely unclear on what I should call this concoction.


For me, peaches and grapes conjure images of a Southern summer backyard potluck, but "Backyard Potluck Slush" wasn't selling it for me.


Speaking of not selling it, one sip of my original blend let me know my flavors weren't quite singing either. This was a slush in need of some brightness.


I added lemon juice, which made things a little sunnier, and finally orange juice, which sealed the deal.


With the addition of the official juice of the Sunshine State, I had a winning recipe with a winning name: The Sunshine Slush.


Its vibes are definitely bright and sunny, and I wouldn't kick it out of a backyard potluck, either--especially in this heat.

Tips for freezing grapes:

Wash and de-stem the grapes first. Transfer the grapes to as many gallon-sized freezer bags as necessary to allow the grapes to rest in a single layer in the sealed bag. You can place the bag(s) on a baking sheet to keep it flat if desired. Freeze the grapes in a single layer like this so that they do not stick to each other and clump up.


Aside from being a fun addition to smoothies and slushes, frozen grapes are a great snack straight out of the bag!


Sunshine Slush

Here's what you'll need:

  • 1 cup coconut water

  • 1 3/4 cup orange juice

  • juice of 1 lemon

  • 1 cup frozen green grapes

  • 10 oz frozen sliced peaches

Here's what you'll do:

  1. Place all the Sunshine Slush ingredients in blender in the order listed. Blend till thoroughly mixed. Serves two. Enjoy immediately for best results!
